Spinach and Ricotta Cannelloni

Made roll ups similar to this….. always a favorite!


I’ve never come across cannelloni tubes in the dried pasta aisle of the supermarket before, so I bought them!
I figured it couldn’t be that tricky to make your own spinach and ricotta stuffing, so thats what I made.



for the stuffing

Dry cannelloni tubes enough to fill the baking dish
100g ricotta
1/4 cup water
2 large handfuls of spinach wilted and chopped
1/2 white onion finely chopped
Salt and pepper
1 egg

for the sauce

Tin of tomatoes
Stock cube
1/2 cup water
1 tbsp tomato puree
1/2 white onion finely chopped
1 tsp dried chillis
1/2 tsp italian herbs
1/4 tsp oregano
1/4 tsp thyme
1 crushed garlic clove
Salt and pepper
Handful of torn basil

Sprinkle of cheese for the top.


1. Line up all your tubes in the dish to see how many will fit. Preheat the oven to 220 degrees c.
